Buffalo Ranch Wild TUrkey Sandwich
Buffalo Ranch Wild Turkey Sandwiches(If you can't find wild, store bought is just fine)
Makes 6-8 sandwiches (using 1 wild turkey breast)
Ingredients: Wild Turkey + Marinade
• 1 wild turkey breast, portioned into cutlets and pounded 1/4-1/2 inch
• 2½ cups buttermilk
• 2 eggs
• 2 tablespoons paprika
• 2 tablespoons Dan-O’s Ranch Seasoning
• A few dashes hot sauceDredge
• 2 cups all-purpose flour
• 1 cup rice flour
• 2 tablespoons paprika
• 1 tablespoon garlic powder
• 1 tablespoon salt
• 2 teaspoons black pepper
• Peanut oil, for frying (2–3 inches in a cast iron or Dutch oven
Homemade Buns (4 buns)
• 2¼ cups all-purpose flour• ¾ cup warm milk (about 105–110°F)• 1 teaspoon instant yeast (4 g)• 2 teaspoons sugar• 1 teaspoon salt• 2 tablespoons olive oil• 1 egg (for egg wash)• Sesame seeds or poppy seeds (optional)
Buffalo Ranch Sauce
• ½ cup mayonnaise• 1 tablespoon Dan-O’s Ranch Seasoning• ¼ cup buffalo sauce
Creamy Slaw
• 1 (8 oz) bag coleslaw mix• ⅓ cup mayonnaise• Juice of ½ lemon• Pinch of sugar or honey• Salt and pepper, to taste

1. Prep and Pound the Turkey. Trim silver skin and any tough connective tissue from the turkey breast.2. Slice the breast into 6-8 even pieces3. Place each piece on a cutting board and cover4. Using a meat mallet, pound each piece to about ¼–⅜ inch thick, shaping them roughly to bun size for even sandwiches.2. Marinate the Turkey1. In a large bowl, whisk together:⁃ Buttermilk⁃ Eggs⁃ Paprika⁃ Dan-O’s Ranch Seasoning⁃ Hot sauce2. Add turkey cutlets and fully submerge.3. Cover and refrigerate for at least 2 hours or overnight3. Make the Buns1. Mix warm milk, yeast, and sugar in a bowl and let sit 5 minutes.2. Add flour, salt, and olive oil. Mix and knead until smooth (8–10 minutes).3. Place in an oiled bowl, cover, and let rise 1½ hours, until doubled.4. Divide into 4 equal portions and shape into buns.5. Cover and let rise 45 minutes.6. Brush with egg wash and add seeds if desired.7. Bake at 400°F for 15–18 minutes until golden brown.8. Cool before slicing.6. Fry the Turkey1. Heat peanut oil to 350°F in a deep pot2.
